Sour Cream and Scallion Potatoes

Sour Cream and Scallion Smashed Potatoes

Looking for the perfect side dish to a delicious steak, shredded pot roast, or oven baked chicken?  Well, look no further, my friend!  These red potatoes are creamy with just a bit of an edge- the perfect complement to your dinner tonight!

Sour Cream and Scallion Potatoes

Ingredients

3 lbs red potatoes cut into 1 inch dice, skins on

¾ cups whole milk

4 tablespoons unsalted butter

½ cup sour cream

1 scallion sliced thinly on the diagonal, plus more to garnish

Salt and pepper to taste

Instructions

Place the cut potatoes in a large pot of boiling water. Simmer uncovered for 15-20 minutes until fork tender. Drain the potatoes and return them to the pot.

Add about ½ of the milk plus all of the butter, sour cream, scallion, and salt and pepper.

Using a potato masher, mash the ingredients together until you reach the desired consistency. We like ours a little chunky in the Mitchell household. Use the additional milk if needed to bring the mixture together.

Serve hot with diagonally sliced scallions on top.
